Method

  1. 1

Make your agua fresca syrup (see the base recipe) in advance and chill it.

  2. 2

Rub a lime wedge around the rim of four tall glasses, then dip the rims in fine salt.

  3. 3

Fill the glasses with ice and divide 200 ml of the ready made agua fresca syrup (see the base recipe) and the lime juice between them.

  4. 4

Top up with the sparkling water and stir gently with a long spoon.

  5. 5

Add sliced strawberries to each glass and serve straight away.

Tips

  • Use well chilled sparkling mineral water and add it last so the bubbles last longest.
  • Salt the rim of the glass with fine salt and lime for a street style finish.
  • Make a double batch of syrup and freeze in ice cube trays for pretty pink ice cubes.
  • Strawberry syrup works best, but any berry or stone fruit version works.

Storing and freezing

Make just before serving and drink within 1 hour, as the fizz is lost. Do not keep leftovers.

Questions

What is limonada mineral?

It is a Mexican lime soda made with lime juice, sugar and sparkling mineral water. It is very popular in Mexico, often served in tall glasses with salt on the rim.

Can I use lemon instead of lime?

Yes, but the flavour will be softer. Mexican limes are smaller and more aromatic than the large Persian limes sold in UK shops.

Can I make it stronger?

Use 250 ml of syrup instead of 200 ml. Add more lime juice if it gets too sweet.
