Method
- 1
Make your agua fresca syrup (see the base recipe) in advance and chill it.
- 2
Mix 100 ml of the ready made agua fresca syrup (see the base recipe) with the lime juice in a small pan and simmer for 3 minutes until slightly thickened.
3 min - 3
Pat the pineapple rings dry and brush a hot griddle pan with the oil.
- 4
Cook the rings for 3 to 4 minutes on each side until deep golden with dark grill marks.
3 min 30 s - 5
Brush with the syrup glaze for the final 2 minutes, then move to a platter.
- 6
Dust with chilli powder, scatter with mint leaves and serve warm.
Tips
- Cut the pineapple into thick rings or wedges so it chars outside without turning mushy.
- Pat the pineapple dry before grilling. Wet fruit steams and will not brown.
- Brush with the glaze in the last 2 minutes only, because sugar burns fast.
- Serve with a scoop of vanilla ice cream or coconut yoghurt if you like.
Storing and freezing
Best warm. Keep leftovers covered in the fridge for up to 2 days and reheat in a hot pan.
Questions
Can I cook it in the oven?
Yes. Roast the wedges at 220C for 20 to 25 minutes, turning once, and brush with the glaze for the final 5 minutes.
Do I need a barbecue?
No. A hot griddle pan or heavy frying pan works well. Cook in batches so the pan stays hot.
Is the chilli very hot?
No. It is a light dusting. Leave it out for children or use paprika instead.
