Method
- 1
Coat the chicken in 120 ml of your ready made pollo asado marinade (see the base recipe). Cover and chill for 2 to 8 hours.
120 min - 2
Heat a griddle or large frying pan until very hot. Cook the chicken for 6 to 7 minutes per side until charred and cooked through, with the thickest piece at 75C. Rest for 5 minutes, then slice.
13 min - 3
Warm the black beans in a small pan with 2 tbsp water for 4 minutes. Gently reheat your ready made cilantro lime rice (see the base recipe) until steaming hot.
4 min - 4
Warm your ready made flour tortillas (see the base recipe) in a dry pan for 20 seconds per side so they fold without cracking.
- 5
Spread a quarter of the rice down the middle of each tortilla, then add beans, chicken, tomato and avocado. Squeeze over a little lime.
- 6
Fold in the sides, then roll up tightly from the bottom. Toast each burrito seam side down in the oiled pan for 2 minutes per side until golden.
4 min - 7
Halve and serve at once with lime wedges.
Tips
- Warm the tortillas first. Cold ones crack when you roll them.
- Do not overfill. About 150 g of filling per burrito makes a roll that closes neatly and holds together.
- Make it gluten free by using large gluten free wraps from the free-from aisle, warmed the same way.
