Method
- 1
Cook the jasmine rice following the packet instructions and keep it covered.
12 min - 2
Mix the pork mince with the cooked rice, ginger, spring onion and tamari in a bowl. Wet your hands and roll into 20 small balls.
- 3
Heat the oil in a wide pan over a medium heat. Brown the meatballs for 5 minutes, turning, then lift them out.
5 min - 4
Add the ready made laksa paste (see the base recipe) to the pan and fry for 2 minutes.
2 min - 5
Pour in the coconut milk and water and bring to a gentle simmer. Return the meatballs and simmer for 12 minutes, until cooked through with no pink inside and the juices run clear.
12 min - 6
Stir in the lime juice and serve over the rice.
Tips
- Wet your hands when rolling so the mince does not stick.
- Cut one meatball open to check it is cooked through with no pink, and the sauce is steaming hot.
- Chill the shaped meatballs for 15 minutes first if they feel soft, so they hold together.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 3 days. Freeze for up to 3 months. Reheat until steaming hot all the way through.
Questions
Can I use chicken or turkey mince?
Yes. Use the same weight, and cook until the centres are piping hot with no pink. Lean mince can dry out, so keep the sauce simmering gently.
What can I use if I do not have cooked rice?
Use 3 tablespoons of gluten free breadcrumbs. It works the same, soaking up moisture to keep the meatballs tender.
Is this dish gluten free?
Yes, provided you use gluten free tamari and rice or gluten free breadcrumbs. It is also dairy free, egg free and nut free.
