Method
- 1
Break up the cold rice with your hands so there are no lumps. Rice should have been cooled within 1 hour and kept in the fridge, never left out.
- 2
Heat 1 tbsp of the oil in a wok over a high heat. Stir fry the chicken for 4 minutes until cooked through, then tip onto a plate.
4 min - 3
Add the remaining oil and your ready made Thai green curry paste (see the base recipe). Fry for 1 minute, then add the pepper and green beans and stir fry for 3 minutes.
4 min - 4
Push everything to the side, pour the egg into the gap and scramble for 1 minute until just set.
1 min - 5
Add the rice, chicken, fish sauce and sugar. Toss over a high heat for 3 to 4 minutes until the rice is piping hot and the grains are separate.
4 min - 6
Fold in the Thai basil and serve with lime wedges.
Tips
- Cold rice fries better than fresh. Cool it quickly, chill it, and use within 1 day.
- Keep the heat high and the wok moving so the paste fries rather than steams.
- Reheat rice only once, until steaming hot all the way through.
Storing and freezing
Cool quickly and keep in the fridge for up to 1 day. Reheat once only, until steaming hot all the way through. Do not freeze cooked rice dishes made from leftover rice.
Questions
Can I make it with fresh rice?
Cook it, spread it on a tray to cool and chill for 1 hour first. Hot fresh rice turns mushy in the wok.
Is it vegetarian?
Not with the fish sauce and shrimp paste in the base. Swap in prawns or leave out the chicken, but it still contains shrimp paste.
How hot is it?
Medium hot with 50 g of paste. Use 30 g for a milder rice.
