Method
- 1
Soak 8 wooden skewers in water for 30 minutes.
30 min - 2
Mix the coconut milk, turmeric, garlic, lime juice, fish sauce and oil in a bowl. Add the prawns, turn to coat and marinate in the fridge for 20 to 30 minutes.
20 min - 3
Thread 4 to 5 prawns onto each skewer, through the head and tail ends, so they lie flat.
- 4
Heat a griddle pan or barbecue to hot. Grill the skewers for 2 minutes on each side, until pink, lightly charred and curled.
4 min - 5
Warm your ready made satay sauce (see the base recipe) with a splash of water until steaming hot.
- 6
Serve the skewers with the satay sauce for dipping, cucumber slices and lime wedges.
Tips
- Do not marinate longer than 30 minutes. The lime juice starts to firm the prawns and makes them chewy.
- Skewer prawns flat so they cook evenly and are easy to turn.
- Prawns are done when pink all over, opaque in the middle and just curled. Overcooked prawns turn tight and rubbery.
Storing and freezing
Best eaten straight away. If chilling leftovers, cool within 1 hour, keep in the fridge for 1 day and eat cold rather than reheating.
Questions
Can I use frozen prawns?
Yes. Thaw them in the fridge overnight, drain and pat very dry before marinating, as water dilutes the marinade and stops them charring.
Is it gluten free?
Yes, when the fish sauce and satay sauce are gluten free. The satay sauce contains peanuts, so this is not suitable for peanut allergy.
Can I cook them under the grill?
Yes. Grill on a foil lined tray 8 cm from a very hot grill for 2 to 3 minutes per side.
