Method
- 1
Beat the eggs with the coconut milk and a pinch of salt.
- 2
Toast the gluten free bread and keep warm.
- 3
Heat the oil in a non stick pan over a low to medium heat. Fry your ready made Thai green curry paste (see the base recipe) for 1 minute until fragrant.
1 min - 4
Pour in the eggs and stir slowly with a spatula, pulling the eggs from the edge, for 2 to 3 minutes until softly set and creamy.
3 min - 5
Take off the heat while still slightly wet, as they keep cooking.
- 6
Pile onto the toast, then drizzle with your ready made chilli oil (see the base recipe) and scatter with spring onions and coriander.
Tips
- Low heat and constant stirring give soft curds.
- Fry the paste first so the raw garlic flavour cooks out.
- Serve with sliced avocado or tomatoes.
Storing and freezing
Best eaten immediately. Cooked eggs should be chilled within 1 hour and eaten within 1 day, reheated until steaming hot.
