Method
- 1
Slash the chicken thighs twice with a knife. Rub 120 ml of your ready made jerk marinade (see the base recipe) into them and into the slashes. Cover and marinate in the fridge for at least 4 hours, ideally overnight.
- 2
Heat the oven to 200°C (180°C fan). Toss the plantain, peppers and onion with the oil on a large roasting tray and season.
- 3
Nestle the chicken thighs, skin side up, among the vegetables.
- 4
Roast for 45 to 50 minutes, turning the vegetables halfway, until the chicken skin is dark and crisp and the juices run clear.
50 min - 5
Check the thickest part of a thigh reaches 75 C with no pink meat.
- 6
Rest for 5 minutes, scatter over the coriander and serve with lime wedges.
Tips
- Use a big roasting tin so nothing is crowded. Crowded tins steam the food and the skin will not crisp.
- Plantain should be yellow with black spots, so it is sweet and soft when roasted.
- Spoon the pan juices over the vegetables once the chicken is resting. They are full of flavour, but they have touched raw chicken, so only use them after the dish has been cooked through in the oven.
Storing and freezing
Keeps in the fridge for up to 3 days, cooled within 2 hours of cooking. Reheat in a hot oven until steaming hot all the way through. Chicken freezes for up to 2 months without the plantain.
Questions
Can I use chicken breasts?
Yes, but they cook faster and dry out. Use bone in breasts and roast for 30 to 35 minutes, until the thickest part reaches 75 C. Thighs stay juicier and are better for this dish.
What can I use instead of plantain?
Sweet potato chunks work well and take the same time. Ripe bananas turn mushy, so avoid them.
Can I add rice to the same tray?
Not easily. Serve with rice and peas on the side. If you do cook rice, cool and chill leftovers quickly and reheat only once.
