Method

  1. 1

Heat the oven to 220°C (200°C fan). Cut the cauliflowers into 2 cm thick steaks through the core, keeping the stem so they hold together. Save the loose florets.

  2. 2

Mix the olive oil with 100 ml of your ready made jerk marinade (see the base recipe). Brush it over both sides of the steaks and the florets.

  3. 3

Lay the steaks and florets on two lined baking trays. Roast for 30 to 35 minutes, turning once, until charred at the edges and tender when pierced.

While they roast, rinse the rice. Put it in a pan with the coconut milk, water, black beans and a pinch of salt.

  5. 5

Bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes.

Fluff the rice with a fork. Serve the steaks on the rice, scatter with spring onions and add lime wedges.

Tips

  • Use the largest cauliflowers you can find. Only the middle two or three slices per head will hold together as proper steaks.
  • Roast the loose florets on a separate tray, as they cook faster and can be served alongside or stirred through the rice.
  • For extra char, finish the steaks under a hot grill for 2 minutes.

Storing and freezing

Roasted cauliflower keeps in the fridge for up to 3 days. Cool the rice within 1 hour, chill it, and reheat only once until steaming hot all the way through. Do not freeze the steaks, as they turn soft.

Questions

Can I use a different vegetable for steaks?

Yes. Thick slices of celeriac, butternut squash or aubergine all take jerk marinade well. Roast times vary: aubergine takes about 25 minutes, celeriac and squash about 40.

Is the rice dish vegan?

Yes. It is cooked in coconut milk with black beans, a take on rice and peas. It is also gluten free, dairy free, egg free and nut free.

How do I stop the marinade burning?

Roast at {t220} on baking paper and turn once. If the edges darken too fast, cover the tray loosely with foil for the last 10 minutes.
