Toss the cabbage, carrot, pineapple, lime juice, coriander and olive oil with a pinch of salt for the slaw. Leave it to sit for 10 minutes.

  5. 5

Heat the grill or a barbecue to medium hot, or use a griddle pan. Cook the chicken for 6 to 8 minutes on each side, until charred in places and cooked through with no pink inside and juices running clear. Discard any leftover marinade.

Rest the chicken for 5 minutes then slice. Split the rolls and fill with slaw and jerk chicken. Serve hot.

Tips

  • Marinate overnight for the best flavour. The longer it sits, the deeper the spice goes.
  • Grill over a lower heat so the sugars in the marinade char without burning before the chicken cooks through.
  • Make the slaw more tropical by adding sliced mango and a little finely chopped red chilli.

Storing and freezing

Keep cooked chicken for 3 days in the fridge and reheat until steaming hot all the way through. The slaw keeps for 1 day. Rolls keep for 1 day or freeze for 1 month.

Questions

Can I use chicken breast?

Yes, but chicken breast dries out more easily. Slice it in half horizontally to make thinner steaks and cook for 4 to 5 minutes on each side, until cooked through with no pink.

Is jerk chicken very spicy?

It can be fiery from Scotch bonnet chillies. Check how hot your batch of jerk marinade is and serve with the cooling slaw. Use less marinade on the chicken for a milder version.

Can I cook these in the oven?

Yes. Roast the marinated thighs on a tray at {t220} for 25 to 30 minutes, turning once, until charred and cooked through. Finish under a hot grill for extra char.
