Method
- 1
Toss the prawns with 60 ml of your ready made jerk marinade (see the base recipe). Marinate in the fridge for 20 minutes, no longer.
20 min - 2
Mix the mango, cucumber and mint in a bowl with a squeeze of lime juice.
- 3
Heat the oil in a large frying pan over a high heat. Cook the prawns for 2 to 3 minutes on each side, until pink all over and curled.
6 min - 4
Arrange the lettuce leaves on a platter.
- 5
Spoon in the mango salad and the prawns, and top with your ready made pickled red onions (see the base recipe).
- 6
Serve immediately with lime wedges.
Tips
- Do not marinate the prawns for more than 30 minutes. The lime juice and vinegar start to firm and cook the flesh.
- Dry the prawns on kitchen paper before cooking so they sear rather than steam.
- If using frozen prawns, defrost them fully in the fridge overnight and pat dry.
Storing and freezing
Best eaten straight away. Leftover cooked prawns keep in the fridge for 1 day and should be eaten cold or reheated until steaming hot. Do not freeze the finished wraps.
Questions
Can I use cooked prawns?
Yes, but add them to the pan only to warm through for 1 minute after tossing in the marinade. Cooking them for longer makes them rubbery.
Can I use chicken instead?
Yes. Use 400 g of thinly sliced chicken thigh, marinated for 30 minutes and cooked for 6 to 8 minutes until no pink remains.
Is this suitable for a gluten free diet?
Yes. All the ingredients are gluten free, as are the jerk marinade and pickled red onions bases. It is also dairy free, egg free and nut free, but it contains shellfish.
