Method

  1. 1

Boil the split peas with the garlic and turmeric in plenty of water for 25 minutes until tender but not mushy. Drain very well and leave to dry in the colander.

    25 min
  2. 2

Grind or blitz the peas with the cumin and half a teaspoon of salt to a dry, sandy crumb, not a paste.

  3. 3

Mix the flour, baking powder and salt. Add the 1 tbsp oil and enough warm water to make a soft dough. Knead for 5 minutes, then cover and rest for 20 minutes.

    20 min
  4. 4

Divide the dough into 8 balls. Flatten one, put a heaped tablespoon of pea mix in the middle, pinch the dough over to seal, and roll out gently to a circle about 20 cm across.

  5. 5

Heat a dry non-stick frying pan or tava over a medium heat. Cook each roti for 1 minute, flip, brush with a little oil, cook another minute, then flip and cook until flecked with brown.

    4 min
  6. 6

Wrap in a clean tea towel to keep soft. Serve warm with curry or chutney.
