Method
- 1
Rinse and drain the jackfruit, squeeze it dry and shred it with your fingers, discarding any tough cores.
- 2
Heat the oil in a large pan and cook the onion for 5 minutes. Add the sweet potato and your ready made jerk marinade (see the base recipe) and cook for 3 minutes.
5 min - 3
Add the jackfruit, thyme and 100 ml water. Cover and simmer for 15 minutes until the sweet potato is tender and the mixture is thick. Stir in the spring onions and cool completely.
15 min - 4
Heat the oven to 200°C (180°C fan). Knead the turmeric gently into your ready made shortcrust pastry (see the base recipe), then roll to 3 mm thick and cut 8 circles about 12 cm across.
- 5
Fill each with a spoonful of filling, brush the edges with egg, fold over and crimp with a fork.
- 6
Brush with egg and bake on a lined tray for 22 to 25 minutes until golden.

Tips
- Buy young green jackfruit in water or brine, not syrup. It shreds like pulled pork when cooked.
- Squeeze the jackfruit dry before cooking so it takes up the jerk flavour.
- Scotch bonnets are hot, so taste the marinade first. Add less for a milder filling.
Storing and freezing
Keep in the fridge for up to 3 days and reheat at 180C (fan 160C) for 12 minutes until hot through. Unbaked sealed patties freeze for 1 month and bake from frozen in 30 minutes.
Questions
Are these vegan?
The filling is vegan. For vegan patties, make the pastry with dairy free baking block and brush with plant milk instead of egg.
Can I use meat instead?
Yes. Use 300 g cooked minced beef or chicken in place of the jackfruit.
Why add turmeric?
Turmeric gives the pastry the golden colour of a Jamaican patty. It is optional.
