Lift out the chicken pieces with a slotted spoon and set aside.

Blend the soup with a stick blender until smooth. Stir in the coconut milk and lime juice, then return the chicken. Heat for 5 minutes until the chicken is piping hot and cooked through.

Season to taste and serve in warm bowls with coriander.

Tips

  • Blend the soup with the chicken removed, so the pieces keep their texture.
  • If the soup is too thick, loosen it with a little extra stock or water rather than more coconut milk.
  • For a smoky edge, roast the sweet potato in the oven first and add it to the pan with the stock.

Storing and freezing

Keeps in the fridge for up to 3 days, cooled within 2 hours. Freeze in portions for up to 3 months. Reheat until steaming hot all the way through, and do not reheat more than once.

Questions

Can I make this soup vegan?

Yes. Leave out the chicken, use homemade vegetable stock instead of chicken stock, and add a tin of drained chickpeas at the end. The jerk marinade itself is already vegan.

Can I use shop bought stock?

Yes, but choose a gluten free stock cube or liquid stock and check the salt, as the jerk marinade already contains tamari. A low salt stock gives you more control.

How spicy is it?

Medium hot. Sweet potato and coconut milk soften the heat. For a milder soup use 40 ml of jerk marinade, then add extra at the table if you want more.
