Method
- 1
Heat the oven to 200°C (180°C fan). Prick the potatoes all over, rub with half the olive oil and a pinch of salt and put straight on the oven shelf.
- 2
Bake for 1 hour to 1 hour 10 minutes, until the skins are crisp and the middle feels soft when squeezed (use an oven glove).
65 min - 3
Meanwhile, mix the cucumber, tomatoes, red onion, olives, vinegar, remaining oil and half the oregano. Season with black pepper only, as the feta and olives are salty.
- 4
Use your ready made tzatziki (see the base recipe).
- 5
Split the hot potatoes open and fluff the insides with a fork. Spoon in a little tzatziki, then pile on the salad and feta.
- 6
Top with more tzatziki and the rest of the oregano and serve.
Tips
- Bake the potatoes directly on the shelf for the crispest skins.
- Slice the red onion thinly and rest it in the vinegar for 10 minutes to soften its bite.
- Do not salt the salad until the end, as the cucumber will weep.
Storing and freezing
Keep leftover baked potatoes and salad separately in the fridge for up to 2 days. Reheat the potatoes until steaming hot all the way through.
Questions
Are these jacket potatoes gluten free?
Yes. Potatoes, olive oil, vegetables, olives, feta and tzatziki are all naturally gluten free. Check the olives and feta labels if you are coeliac.
Can I cook the potatoes faster?
Yes. Microwave for 8 to 10 minutes first, then crisp the skins in a hot oven at 200C for 15 to 20 minutes. The skins are slightly less crisp.
Can I make it dairy free?
Yes. Use tzatziki made with coconut or soya yoghurt and leave out the feta, or use a dairy free feta style block.
