Method
- 1
Heat the oven to 220°C (200°C fan). Put the chips in a bowl of cold water for 10 minutes, then drain and dry them very well on a clean tea towel.
10 min - 2
Toss the chips with 2 tbsp of the olive oil and half the oregano. Spread them over two large baking trays in a single layer, with space between.
- 3
Bake for 35 to 40 minutes, turning once halfway, until deep golden and crisp at the edges.
38 min - 4
Meanwhile, use your ready made tzatziki and pickled red onions (see the base recipes). Toss the tomatoes with the remaining oil and oregano and a pinch of black pepper.
- 5
Pile the hot chips onto a large platter. Scatter over the feta and tomatoes while the chips are still steaming so the feta softens slightly.
- 6
Spoon over the tzatziki, top with the pickled red onions and parsley, and serve straight away.
Tips
- Soaking and drying the chips gives crisper edges, because it removes surface starch.
- Feta is already salty, so you will not need extra salt on the chips.
- Serve at once. Tzatziki on cold chips is fine, but hot chips under it go soft within minutes.
Storing and freezing
Best eaten fresh. Keep any leftover chips and toppings apart in the fridge for up to 2 days and re-crisp the chips in a hot oven for 10 minutes.
Questions
Are these chips gluten free?
Yes, as written. Plain potatoes, olive oil, feta, tomatoes and tzatziki contain no gluten. Check the feta label if you are coeliac, as a few brands add anti-caking agents.
Can I make them dairy free?
Yes. Swap the tzatziki for the dairy free version made with coconut or soya yoghurt, and use a dairy free feta style block or leave the cheese out.
Can I use frozen oven chips?
Yes. Bake them to the packet timings and top as above. Check the pack if you need them gluten free, as some have a coating.
