Method

  1. 1

Make your ceviche lime marinade and pickled red onions (see the base recipes) first and chill both.

  2. 2

Heat a large frying pan until very hot and add half the oil. Fry half the mushrooms for 4 to 5 minutes without stirring too much, until golden brown at the edges, then tip into a bowl. Repeat with the rest.

  3. 3

While the mushrooms are still warm, pour over 170 ml of the ready made ceviche lime marinade (see the base recipe) and the lime juice. Stir and leave to cool for 15 minutes.

  4. 4

Fold in the tomato, pickled red onions (see the base recipe) and most of the coriander.

  5. 5

Gently fold in the avocado just before serving, taste and add salt if needed. Scatter over the remaining coriander.

Tips

  • Sear the mushrooms in a very hot dry pan in two batches so they brown rather than steam. Browning gives a meaty flavour.
  • Marinate the mushrooms while still warm. They soak up the lime much better than cold ones.
  • King oyster or oyster mushrooms give the most seafood-like texture but button or chestnut mushrooms work well too.
  • Add the pickled onions at the end for a sweet, tangy crunch.

Storing and freezing

Keeps well for up to 2 days in a sealed container in the fridge. Stir before serving, and add the avocado only when you serve.

Questions

Is mushroom ceviche vegan?

Yes. Mushrooms, lime, chilli, herbs and olive oil are all plant based, so it is vegan, gluten free, dairy free, egg free and nut free.

Can I use cooked mushrooms from a jar?

Fresh mushrooms seared at home taste far better, but drained jarred mushrooms in a pinch will work if you pat them dry first.

Why sear them first?

Searing removes excess water and builds flavour, so the mushrooms stay firm and do not turn soggy in the lime marinade.
