  3. 3

    8 min
  4. 4

Stir in half the cheese until it melts. Season with salt and a squeeze of lime if you like.

  5. 5

Spoon into a warm dish, top with the remaining cheese and grill for 2 to 3 minutes until bubbling.

    2 min 30 s
  6. 6

Scatter with coriander and serve hot with your tostadas or totopos (see the base recipe).

Tips

  • Mash only part of the beans for a creamy dip with some whole beans.
  • Use the bean cooking broth to loosen the dip, never plain water.
  • Serve very hot, as it thickens as it cools.

Storing and freezing

Keeps in the fridge for up to 3 days once cooled within 2 hours. Reheat with a splash of water until steaming hot throughout. Freezes well without the cheese for up to 2 months.

Questions

What does frijoles puercos mean?

It means pig beans, a dish from Sinaloa in northern Mexico made with beans, chorizo and cheese, often served at parties and with grilled meats.

Can I use tinned beans?

Yes. Use two 400 g tins of drained pinto or pink beans with 100 ml water or stock, but home made pot beans have more flavour.

Is it dairy free?

Not with the cheese. Leave it out and add a spoonful of the red chorizo fat on top instead to make it dairy free.
