Method
- 1
Toss the chicken with the fajita seasoning mix (see the base recipe) and the oil. Heat a large frying pan over a high heat and cook for 5 to 6 minutes until golden and cooked through. Add the pepper and onion and cook for 5 minutes. Squeeze over the lime juice.
11 min - 2
Warm your ready made refried beans (see the base recipe) in a small pan with a splash of water until hot and spreadable.
4 min - 3
Warm the flour tortillas (see the base recipe) in a dry pan or microwave for 20 seconds so they bend without tearing.
- 4
Spread each tortilla with beans, leaving a 3 cm border. Add rice, chicken mixture and cheese in a line down the middle.
- 5
Fold in the sides, then roll up tightly from the bottom to enclose the filling.
- 6
Heat a dry frying pan over a medium heat. Cook the burritos seam side down for 2 minutes, then turn and cook for 2 minutes more until golden and crisp.

Tips
- Warm tortillas bend without cracking. Over-stuffing is the usual cause of tearing, so keep the filling in a tidy line.
- Searing the burrito seam side down first seals it shut without needing a toothpick.
- Wrap in foil to keep them warm and tidy for a packed lunch.
- Freeze burritos individually wrapped, then reheat from frozen in the oven.
Storing and freezing
Keep in the fridge for up to 3 days, cooled within 1 to 2 hours. Wrap and freeze for up to 2 months. Reheat until steaming hot all the way through. Do not reheat rice more than once.
Questions
Can I freeze burritos?
Yes. Let them cool completely, wrap each one tightly in foil or baking paper and freeze for up to 2 months. Thaw overnight in the fridge and reheat in a hot oven until steaming hot throughout.
What is the best rice for burritos?
Plain long grain rice, or the Mexican style rice from this site, works well. Make sure it is cooled quickly and kept in the fridge if it is not used straight away.
Can I make these vegetarian?
Yes. Swap the chicken for sliced mushrooms or a tin of drained black beans, and add the same peppers and onion. The refried beans must be a vegetarian version made without lard.
