  2. 2

If your tostadas (see the base recipe) have gone soft, warm them in the oven at 180°C (160°C fan) for 4 minutes to crisp.

    4 min
  3. 3

Spread each tostada with a little crema.

  4. 4

Top with lettuce, carnitas and avocado slices.

  5. 5

Finish with pickled red onions (see the base recipe) and queso fresco, and serve straight away with lime wedges.

Tips

  • Assemble at the table. A tostada waits for no one and goes soft in about 10 minutes once topped.
  • Use a spoonful of crema or mashed avocado as a barrier to protect the crunch.
  • Eat with your hands, tilting the tostada over the plate.

Storing and freezing

Keep the cooked components separate in the fridge for up to 3 days and assemble fresh.

Questions

How do I stop tostadas breaking?

Hold them flat in your palm, pile toppings in the middle and pick up carefully. A thin layer of beans or crema also acts as glue.

Can I make it dairy free?

Yes. Skip the crema and queso fresco and add extra avocado and a squeeze of lime.

Are the tostadas gluten free?

The base recipe uses corn only, so yes. If you buy tostadas, check the label.
