Method

  1. 1

Warm the black beans in a small pan with a splash of water for 4 minutes, until steaming hot. Season with a pinch of salt.

    4 min
  2. 2

Gently warm your ready made queso (see the base recipe) in a pan over a low heat, stirring, until smooth and steaming hot all the way through. Add a splash of milk if it has thickened.

    4 min
  3. 3

Spread the broken tostadas on a large platter or tray.

  4. 4

Spoon the warm beans over the tostadas, then pour over the hot queso.

  5. 5

Top with your ready made escabeche (see the base recipe), spring onions, coriander and dollops of soured cream.

  6. 6

Serve immediately with lime wedges. Chips go soft within about 10 minutes.

Tips

  • Keep the queso gently warm over a low heat. High heat makes it grainy.
  • Serve queso in a bowl alongside for dipping if you want to keep the chips crisp for longer.
  • Chop a few escabeche jalapeño rings finely into the queso for a spicy kick.

Storing and freezing

Best eaten straight away. Leftover queso keeps in the fridge for 3 days and reheats gently with a splash of milk.

Questions

Are these nachos gluten free?

Yes, when the tostadas are made from gluten free corn tortillas as in the base recipe. Check the label on tinned beans and any shop bought chips.

Can I add meat?

Yes. Shredded chicken, chorizo or beef all work. Warm the meat through before layering and scatter it over the chips before the queso.
