Method
- 1
Heat the oven to 200°C (180°C fan). Make or open your totopos (see the base recipe) so they are ready for dipping.
- 2
Heat the oil in a large frying pan over a high heat. Cook the dry sweetcorn for 6 to 8 minutes until charred in places. Cool for 5 minutes.
7 min - 3
Beat the cream cheese in a bowl until smooth, then stir in your ready made elote sauce (see the base recipe), half the cheddar, the jalapeños, spring onions and smoked paprika.
- 4
Fold in the charred corn. Spoon into a small baking dish and top with the rest of the cheddar.
- 5
Bake for 20 minutes until bubbling at the edges and golden on top.
20 min - 6
Scatter over the coriander and serve hot with the totopos.
Tips
- Serve it hot. Once the dip cools, the cheese sets firm.
- Keep some jalapeño seeds back if you want extra heat for the brave.
- Warm the totopos for 3 minutes in the oven so they are crisp as you dip.
- Serve with raw carrot, cucumber and pepper sticks for a gluten free and lighter dipper too.
Storing and freezing
Cool leftovers within 1 hour and keep in the fridge for up to 2 days. Reheat once, in the oven, until steaming hot all the way through. Do not freeze.
Questions
Can I make it ahead?
Yes. Assemble the dip in its dish up to a day ahead, cover and chill, then bake for 25 minutes straight from the fridge.
Can I make it in a slow cooker?
Yes. Mix everything and cook on low for 2 hours, stirring once, until hot and melted.
How spicy is it?
Mild to medium. Two deseeded jalapeños give gentle warmth. Leave the seeds in for more heat.
