Method

  1. 1

Heat the oven to 160°C (140°C fan). Put the short ribs, halved onion and garlic in a large heavy pot and pour over the water and your ready made pozole rojo base (see the base recipe).

  2. 2

Bring to a simmer on the hob, then cover tightly and cook in the oven for 2 hours 30 minutes, until the meat is falling off the bone.

  3. 3

Lift out the ribs and let them cool for 10 minutes. Remove the bones and any big pieces of fat, and break the meat into chunks. Spoon the fat off the top of the broth.

  4. 4

Return the meat to the pot, add the hominy and simmer on the hob for 20 minutes.

    20 min
  5. 5

Season to taste with salt and a squeeze of lime. Fish out the onion halves.

  6. 6

Serve in wide bowls with the cabbage, radish, lime and oregano on the side.

Tips

  • Chill the pot overnight if you can. The fat sets on top and lifts off in one piece, leaving a cleaner, deeper broth.
  • Ask the butcher to cut short ribs into 5 cm pieces so they fit the pot and cook evenly.
  • A little extra lime at the end keeps a rich beef broth bright.

Storing and freezing

Keeps in the fridge for 3 days. Freeze in portions for up to 3 months, cool quickly first, and reheat until steaming hot all the way through.

Questions

Can I make this in a slow cooker?

Yes. Put everything except the hominy in the slow cooker on low for 8 hours, then add the hominy for the last 30 minutes.

Can I use stewing beef instead of short ribs?

Yes. Use 800 g of chuck cut into big chunks and cook for 2 hours. You lose a little richness from the bone.

Is it gluten free?

Yes, as written. The base uses gluten free stock and the other ingredients contain no gluten. Check your tostadas or any bought garnish if you add them.
