  2. 2

Heat the remaining oil in a large frying pan over a high heat. Fry the peppers and onion for 6 minutes, until softened and charred at the edges. Tip onto a plate.

  3. 3

Cook the chicken in the same pan for 6 to 7 minutes, until golden and cooked through with no pink inside.

    7 min
  4. 4

Return the vegetables, toss for 1 minute and take to the table sizzling.

  5. 5

Warm your ready made flour tortillas (see the base recipe) in a dry pan or the microwave until soft.

  6. 6

Fill with chicken and veg, and top with your ready made pico de gallo (see the base recipe) and avocado.

Tips

  • Cut the chicken across, not along, the grain so the strips stay tender.
  • Cook in two batches if your pan is small, so the meat browns instead of steaming.
  • Squeeze lime over at the end to brighten the earthy achiote.

Storing and freezing

Keep leftover chicken and veg in the fridge for up to 2 days. Reheat until steaming hot all the way through.

Questions

Can I use thighs?

Yes. Boneless thighs are juicier and forgiving. Cook for 8 minutes until golden and no pink remains.

Are these gluten free?

Not with flour tortillas. Use gluten free corn tortillas instead, which also suit this filling well.

Can I make it ahead?

Marinate the chicken up to 12 hours ahead in the fridge. Cook just before serving for the best texture.
