Method
- 1
Mash your ready made pot beans (see the base recipe) with the cumin, smoked paprika and half the lime juice to a thick, spreadable paste. Taste and add salt. Cool completely if warm.
- 2
Spread the beans in an even layer in a shallow serving dish, about 20 cm square.
- 3
Spread the soured cream carefully over the beans in an even layer.
- 4
Spoon your ready made guacamole (see the base recipe) on top and smooth gently, right to the edges to keep it from browning.
- 5
Drain the pico de gallo (see the base recipe) in a sieve and scatter evenly over the guacamole.
- 6
Finish with the grated cheese and spring onions. Chill for at least 15 minutes, then serve with the tortilla chips.

Tips
- Drain the pico de gallo well. Too much juice turns the layers watery.
- Smooth the guacamole right to the edges and add a squeeze of lime to stop it browning.
- Make the dip up to 4 hours ahead and keep it covered in the fridge.
Storing and freezing
Cover and keep in the fridge for up to 1 day. Do not freeze. Do not leave it at room temperature for more than 2 hours.
Questions
Can I make this dairy free?
Yes. Use a dairy free soured cream alternative or skip the layer, and replace the cheese with extra pico de gallo or sliced olives.
How far ahead can I make it?
Up to 4 hours, covered in the fridge. Add the cheese and spring onions just before serving for the best colour and texture.
Is it gluten free?
Yes, as long as your tortilla chips are gluten free. Check the label, as some chips contain wheat.
