  4. 4

Return everything to the pan, squeeze over the lime juice and toss.

  5. 5

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  6. 6

Serve the sizzling vegetables at the table with the tortillas and your ready made guacamole (see the base recipe).

Tips

  • Rinse nopales well; the brine is very salty and sticky.
  • Use the biggest, hottest pan you have and cook in batches. Overcrowding steams the vegetables.
  • Slice portobello mushrooms thickly so they stay meaty and do not shrivel.
  • If you cannot find nopales, use green beans or courgette strips.

Storing and freezing

Keep leftover vegetables in the fridge for up to 2 days. Eat the guacamole on the day it is opened, or press cling film onto the surface and use within 24 hours.

Questions

What do nopales taste like?

Nopales are the pads of the prickly pear cactus. They taste green and slightly tart, like green beans with a tender, slightly slippery texture. Jarred ones are available in some world food shops.

Is this dish vegan?

Yes. The vegetables, tortillas, fajita seasoning and guacamole are all vegan, provided your fajita seasoning has no animal ingredients.

Can I use other vegetables?

Yes. Courgette, aubergine, sweet potato strips and tofu all work well. Give denser vegetables a longer time in the pan.
