  4. 4

Season with salt and a squeeze of lime.

Tips

  • Add the courgette late so it keeps its colour and some bite.
  • Char the sweetcorn in a dry pan first for a smoky flavour.
  • The base uses chicken stock, so this is not vegetarian.

Storing and freezing

Keeps in the fridge for 2 days without the toppings. Reheat until steaming hot all the way through.

Questions

Is this vegetarian?

No. The ready made tortilla soup base is made with chicken stock, so this soup is not vegetarian or vegan.

Can I add beans?

Yes. A tin of black beans, drained and rinsed, makes it more filling.

Can I use other vegetables?

Yes. Chayote, green beans or carrots can replace the courgette.
