Method

  1. 1

Heat the oven to 200°C (180°C fan). Heat the oil in a frying pan over a medium high heat and cook the chicken for 6 minutes until golden and cooked through, with no pink inside.

    6 min
  2. 2

Stir in your ready made BBQ sauce (see the base recipe) and the black beans and warm for 3 minutes.

    3 min
  3. 3

Spread your ready made tortilla chips (see the base recipe) over a large baking tray.

  4. 4

Spoon the BBQ chicken and beans over the chips and scatter with the cheese.

  5. 5

Bake for 8 to 10 minutes, until the cheese has melted and bubbles.

    9 min
  6. 6

Top with your ready made pico de gallo (see the base recipe) and the jalapenos, and serve straight away.

Tips

  • Layer the chips in two layers with filling in between, so more chips get topped.
  • Add the pico de gallo only at the end so the tray stays crisp.
  • Use any melting cheese, such as Monterey Jack or mozzarella.

Storing and freezing

Best eaten at once. The chicken and beans keep 2 days in the fridge; reheat until steaming hot all the way through.

Questions

Can I use shop bought chips?

Yes. Use about 200 g of lightly salted corn tortilla chips if you have not made your own.

Can I make it vegetarian?

Yes. Swap the chicken for more black beans or crumbled tofu fried in the BBQ sauce. The cheese must be vegetarian.

Are the nachos gluten free?

They can be, with corn chips labelled gluten free and the BBQ sauce from the base recipe. Check the cheese label too.
