Method
- 1
Coat the steak in your ready made carne asada marinade (see the base recipe) and leave it for at least 30 minutes.
30 min - 2
Heat a griddle or heavy frying pan until very hot and cook the steak for 3 to 4 minutes each side. Rest for 5 minutes, then slice thinly across the grain and chop into bite sized pieces. Discard the marinade left in the dish.
8 min - 3
Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.
- 4
Spread the tostadas (see the base recipe) in a large warm ovenproof dish or on a platter.
- 5
Scatter the steak over the tostadas, then pour the queso over everything.
- 6
Top with the red onion, jalapeños and coriander, squeeze over the lime and serve at once.
Tips
- Slice the steak thinly across the grain for tender nachos.
- Build in two layers so every chip gets steak and queso.
- Serve immediately. Chips lose their crispness within minutes under sauce.
Storing and freezing
Best eaten fresh. Keep leftover steak and queso separately in the fridge for up to 2 days and reheat until steaming hot all the way through.
Questions
Can I use cooked leftover steak?
Yes. Slice it thinly and warm it briefly in a hot pan until steaming hot all the way through. Use fresh lime and coriander for brightness.
Are these nachos gluten free?
Yes, with corn tostadas, gluten free cornflour in the queso and gluten free pickled jalapeños. They contain dairy but no egg or nuts.
How do I stop them going soggy?
Spread the chips thinly, pour the queso at the last minute and eat quickly.
