Method
- 1
Make the tres leches sponge and soak the day before and chill it (see the base recipe). Use two thirds of the cake and keep the rest.
- 2
Toss the mango with the lime juice in a bowl. Leave 10 minutes.
10 min - 3
Whip the cream with icing sugar, vanilla and lime zest to soft peaks.
- 4
Spread the cream over the cake and heap the mango on top.
- 5
Chill for 20 minutes, cut into 8 portions and serve cold.
Tips
- Choose mangoes that give slightly when pressed and smell sweet at the stalk.
- Drain the mango before spooning on, or the juice will soak the cream.
- Frozen mango chunks, fully thawed and drained, work out of season.
Storing and freezing
Keeps 2 days covered in the fridge. Add the mango the same day for best colour and texture.
Questions
Can I use tinned mango?
Yes, drain it well and pat dry. Fresh gives the best flavour.
Does the lime go with the milk?
Yes. The acid cuts through the sweet milk soak and keeps the cake from feeling heavy.
Is it gluten free?
No. The sponge is made with plain wheat flour, so it is not suitable for coeliacs. A gluten free flour version would need testing.
