    5 min
  2. 2

Warm your ready made corn tortillas (see the base recipe) one at a time in a dry pan for 30 seconds per side. Wrap in a tea towel to keep warm.

  3. 3

Heat the oil in a large frying pan over a high heat until very hot. Cook the prawns for 2 minutes per side until pink, curled and opaque all the way through.

    4 min
  4. 4

Fill each tortilla with prawns, a spoonful of your ready made pico de gallo (see the base recipe) and a slice of avocado.

  5. 5

Top each taco with a little of your ready made salsa macha (see the base recipe). Serve straight away.

Tips

  • Dry the prawns well so they sear rather than steam.
  • Salsa macha is rich and hot, so start with half a teaspoon per taco.
  • Do not marinate the prawns in the lime for more than 10 minutes or the texture goes chalky.

Storing and freezing

Best eaten fresh. Cool leftover prawns within 1 hour and keep in the fridge for 1 day.

Questions

Can I use cooked prawns?

Yes, but warm them for just 30 seconds in the pan or they turn rubbery.

Is the salsa macha spicy?

It has medium heat from the dried chillies. Use less if serving children.
