Method

  1. 1

Marinate the steak in your ready made carne asada marinade (see the base recipe) in the fridge for 2 to 8 hours. Discard the used marinade.

  2. 2

Pat the steak dry and cook on a very hot griddle for 3 minutes each side for medium. Rest for 5 minutes, then slice thinly across the grain.

  3. 3

Whisk the lime juice and olive oil with a pinch of salt for the dressing.

  4. 4

Toss the lettuce, black beans, sweetcorn and radishes with the dressing and divide between 4 plates.

  5. 5

Top with the avocado and sliced steak, then spoon over the pico de gallo (see the base recipe) and serve.

Tips

  • Slice against the grain so the steak stays tender in a cold salad.
  • Dress the leaves just before serving so they stay crisp.
  • Warm the beans in a pan for a half warm salad.

Storing and freezing

Keep the steak and pico de gallo separately from the dressed salad. Cooked steak keeps in the fridge for up to 3 days. Eat the dressed salad the same day.

Questions

Can I use leftover steak?

Yes. Leftover carne asada, cooled quickly and kept in the fridge for up to 3 days, works well sliced cold on top of the salad.

Is this salad gluten free and dairy free?

Yes. Steak, marinade, vegetables, beans, avocado and dressing contain no gluten, dairy, egg or nuts. Check the tinned beans and sweetcorn for added ingredients.
