Method
- 1
Toss the steak cubes with your ready made carne asada marinade (see the base recipe) and chill for 2 to 4 hours. Discard any marinade left in the bowl.
- 2
Fry the bacon in a large frying pan over a medium heat for 6 minutes until crisp. Lift out and leave the fat in the pan.
6 min - 3
Raise the heat to high. Drain and pat the steak dry, then fry in 2 batches for 3 to 4 minutes until browned all over.
4 min - 4
Add the oil, peppers and onion and fry for 5 minutes until just soft. Return the bacon and steak and stir to mix.
5 min - 5
Scatter over the cheese, cover with a lid and cook for 2 minutes until melted.
2 min - 6
Warm the corn tortillas (see the base recipe) in a dry pan. Spoon the alambre into the tortillas and serve with lime.
Tips
- Cook the steak in batches in a really hot pan so it browns, not steams.
- Keep the vegetables slightly crisp, as the cheese and bacon are rich.
- Serve with salsa taquera and pickled onions for sharpness.
Storing and freezing
Keeps in the fridge for up to 3 days if cooled within 1 to 2 hours. Reheat in a pan until steaming hot all the way through. Not suitable for freezing once the cheese is melted in.
Questions
What is alambre?
Alambre means wire, from the skewered meat idea. In Mexico it is chopped grilled meat with peppers, onion, bacon and melted cheese, served with tortillas.
Can I use chicken?
Yes. Use boneless chicken thighs cut small and marinated for 2 hours, and cook until golden and no pink remains.
