Method

  1. 1

Heat a heavy baking tray in the oven at 250°C (230°C fan), or its highest setting, for at least 30 minutes.

  2. 2

Warm your ready made refried beans (see the base recipe) in a small pan for 3 minutes until spreadable. Add a splash of water if they are stiff.

    3 min
  3. 3

Divide your ready made pizza dough (see the base recipe) in half. Stretch each piece to about 30 cm on baking paper dusted with semolina.

  4. 4

Spread the warm beans over the bases, leaving a 2 cm rim. Scatter over the cheese and jalapeños.

  5. 5

Slide onto the hot tray and bake for 8 to 10 minutes until golden at the edge and the cheese is bubbling.

    10 min
  6. 6

Top with the avocado, a spoonful of your ready made pico de gallo (see the base recipe) and the lime juice. Serve the rest of the pico on the side.

Tips

  • Add the pico de gallo at the end. Fresh tomato and onion go soft and wet in the oven.
  • Beans spread best when they are warm. Cold refried beans tear the dough.
  • Top with shredded lettuce and soured cream if you like a taco pizza feel.

Storing and freezing

Best the same day. Cool leftovers within 1 to 2 hours, keep covered in the fridge for up to 2 days and reheat until steaming hot all the way through. Keep leftover pico de gallo separate for up to 2 days.

Questions

Is this a Mexican dish?

No. It is a Tex-Mex style pizza, which borrows refried beans, jalapeños and fresh salsa from Mexican cooking. It sits on pizza dough rather than a tortilla.

Can I make it vegan?

Yes. Leave out the cheese or use a dairy free melting cheese. The dough, refried beans and pico de gallo base recipes are vegan.

Can I add meat?

Yes. Cooked chorizo, seasoned beef mince or shredded chicken all work. Scatter 150 g of cooked meat over the beans before the cheese.
