Method

  1. 1

Heat the oven to 200°C (180°C fan). Wipe the mushroom caps clean and lay them gill side up on a lined tray.

  2. 2

Cook your homemade Mexican chorizo (see the base recipe) in a cold pan for 8 minutes, breaking it up, until browned and cooked through.

    8 min
  3. 3

Add the oil, chopped mushroom stalks and onion and cook for 5 minutes until the moisture has gone. Add the garlic for 30 seconds.

    5 min 30 s
  4. 4

Take off the heat and stir in the cream cheese until combined. Pile the filling into the mushroom caps and top with cheddar.

  5. 5

Bake for 20 minutes until the mushrooms are tender and the tops are golden.

    20 min
  6. 6

Top with your pico de gallo (see the base recipe) and serve warm.

Tips

  • Cook the stalks until dry, or the filling will leak and make the caps watery.
  • Pick mushrooms of even size so they bake at the same pace.
  • Choose a spoonful of crema in place of cream cheese for a looser filling.

Storing and freezing

Keeps in the fridge for up to 2 days once cooled within 2 hours. Reheat at {t180} for 12 minutes until steaming hot throughout. Not ideal for freezing.

Questions

Can I make them ahead?

Yes. Fill the caps up to 1 day ahead, cover and chill, then bake just before serving. Add 5 minutes to the cooking time.

Can I make them dairy free?

Yes. Use dairy free cream cheese and leave off the cheddar. Use a dairy free cheese alternative if you like.

Are they low carb?

They contain no flour, bread or rice, so they suit a low carb way of eating.
