Method

  1. 1

Heat the oven to 220°C (200°C fan). Toss the cauliflower with the oil, cumin and a good pinch of salt on a large baking tray.

  2. 2

Roast for 25 minutes, turning once, until tender and browned at the edges.

    25 min
  3. 3

Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.

  4. 4

Tip the cauliflower into an ovenproof dish, pour over the warm queso and scatter over the jalapeños.

  5. 5

Return to the oven at 200°C (180°C fan) for 10 minutes until bubbling at the edges.

    10 min
  6. 6

Sprinkle with coriander and serve hot.

Tips

  • Roast on a single layer so the cauliflower browns rather than steams.
  • Pat the florets dry after washing for better roasting.
  • Add crushed tostadas on top for a crunchy topping.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Reheat until steaming hot all the way through. Not suitable for freezing.
