    3 min
  3. 3

Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.

  4. 4

Stir your ready made chipotle in adobo sauce (see the base recipe) into the queso until smooth, then fold in the prawns.

  5. 5

Reheat your ready made green rice (see the base recipe) in a covered pan with a splash of water until steaming hot all the way through.

  6. 6

Spoon the rice into warm bowls, top with the prawns in queso and scatter with coriander. Serve with lime wedges.

Tips

  • Do not overcook the prawns. They turn rubbery after about 4 minutes.
  • Fold the prawns into the queso off the heat so the sauce stays smooth.
  • Start with 1 tablespoon of chipotle sauce, taste, then add more if you want extra heat.

Storing and freezing

Best eaten at once. Cool leftovers within 1 hour and keep in the fridge for up to 1 day. Reheat once, until steaming hot all the way through.
