  1. 1

Rub the chops with the cumin, salt and half the oil. Leave for 15 minutes at room temperature.

    15 min
  2. 2

Heat the remaining oil in a heavy frying pan over a medium-high heat. Cook the chops for 5 to 6 minutes each side until golden and cooked through with no pink and clear juices. Rest for 5 minutes.

    11 min
  3. 3

Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.

  4. 4

Stir your ready made chipotle in adobo sauce (see the base recipe) into the warm queso until smooth.

  5. 5

Reheat your ready made red rice (see the base recipe) in a covered pan with a splash of water until steaming hot all the way through.

  6. 6

Serve each chop on a mound of rice with the smoky queso spooned over and a lime wedge.

Tips

  • Pat the chops dry before seasoning for a good sear.
  • Add the chipotle sauce gradually. It adds both smoke and heat.
  • Check chops are cooked through with a probe at 70 degrees C or until the juices run clear.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 2 days. Reheat the rice only once and make sure everything is steaming hot all the way through.
