Method
- 1
Boil the potato cubes in salted water for 8 minutes, until just tender, then drain well and let the steam escape.
8 min - 2
Heat a large non stick frying pan over a medium heat. Add your ready made Mexican chorizo (see the base recipe) and fry for 6 to 8 minutes, breaking it up, until cooked through, browned and the fat has run out.
7 min - 3
Push the chorizo to one side. Add the onion and potatoes and fry for 8 minutes, turning, until the potatoes are crisp and golden.
8 min - 4
Meanwhile, put your ready made cilantro lime rice (see the base recipe) in a pan with 3 tbsp water, cover and heat for 5 minutes until steaming hot all the way through.
- 5
In a separate pan, heat the oil and fry the eggs for 2 to 3 minutes until the whites are set and the edges crisp.
3 min - 6
Spoon the rice onto plates, top with the chorizo and potato mixture, then the eggs. Finish with coriander and lime.
Tips
- Do not add oil for the chorizo. The pork fat renders out and flavours the potatoes.
- Make sure the chorizo is fully cooked through with no pink left, since it is made from raw pork mince.
- Parboil the potatoes first so they finish in the pan crisp outside and fluffy inside.
Storing and freezing
Cool leftover chorizo and potato within 1 hour and keep in the fridge for up to 3 days. Reheat only once until steaming hot all the way through. Fried eggs are best eaten fresh.
Questions
Is Mexican chorizo the same as Spanish chorizo?
No. Mexican chorizo is raw, spiced ground pork flavoured with dried chillies and vinegar, and it is cooked before eating. Spanish chorizo is a cured, smoked sausage you can slice and eat as it is.
Can I use shop bought chorizo?
Yes, use fresh raw Mexican style chorizo if you can find it. Do not swap in cured Spanish chorizo, which behaves differently in the pan and is saltier.
Can I skip the egg?
Yes. The chorizo, potatoes and rice make a complete meal. Add sliced avocado instead of eggs if you like.
