Method
- 1
Mix 60 ml of your ready made chipotle in adobo sauce (see the base recipe) with the garlic, lime juice, oil and salt. Spoon the remaining 40 ml into a clean small bowl for later.
- 2
Put the chops in a dish and coat them with the marinade. Cover and chill for at least 1 hour, or up to 8 hours. Take them out of the fridge 20 minutes before cooking.
60 min - 3
Warm your ready made refried beans (see the base recipe) in a small pan with the water, stirring, until steaming hot all the way through. Keep warm.
4 min - 4
Heat a griddle or heavy frying pan over a high heat. Cook the chops for 3 to 4 minutes on each side for pink, longer for well done, until they are cooked to your liking with no raw meat in the centre.
8 min - 5
Rest the chops on a warm plate for 5 minutes. Brush with the reserved chipotle sauce from the clean bowl.
5 min - 6
Serve with the beans, pico de gallo (see the base recipe) and lime wedges.
Tips
- Reserve some of the chipotle sauce before it touches raw meat. Never use leftover marinade from raw meat as a sauce.
- Leave the chops at room temperature for 20 minutes before cooking so they cook evenly.
- Use a very hot pan. A good sear gives a charred, smoky crust that suits the chipotle.
- Cut the chops into cutlets if you want smaller portions, and allow 3 per person.
Storing and freezing
Cool leftover chops within 1 to 2 hours and keep in the fridge for up to 2 days. Eat cold or reheat until steaming hot all the way through. Keep the beans for up to 4 days.
Questions
How long should I marinate the lamb?
At least 1 hour and up to 8 hours. Longer marinating in lime juice can make the surface mushy, so avoid leaving it overnight.
Can I cook these on a barbecue?
Yes. Cook over hot coals for 3 to 4 minutes per side, turning once, until charred outside and cooked through with no raw centre. Rest before serving.
Is the chipotle sauce very hot?
It is smoky and moderately hot. Reduce the amount in the marinade by half if you prefer milder, and serve extra sauce at the table.
