Method
- 1
Heat the oil in a large pot over a medium heat. Cook the onion for 5 minutes until soft, then add the garlic and tomatoes and cook for 5 minutes, until the tomatoes collapse.
10 min - 2
Add the potatoes, your ready made homemade chicken stock (see the base recipe) and the chipotle adobo sauce (see the base recipe). Bring to a simmer and cook for 15 minutes, until the potatoes are very soft.
15 min - 3
Mash about half the potato against the side of the pot, or blitz a third of the soup with a stick blender, so the soup is creamy with some chunks.
- 4
Season with the salt and simmer for 2 minutes.
- 5
Ladle into bowls and top with the avocado, queso fresco and coriander. Serve with lime wedges.
Tips
- Adobo sauce is spicy, so add it gradually. Start with 2 tablespoons and add more to taste.
- Floury potatoes such as Maris Piper break down and thicken the soup without cream.
- Queso fresco is mild and crumbly. Feta gives a similar salty tang, or use a dairy free alternative.
- Leave out the cheese and avocado topping for a simple vegan-style bowl (with vegetable stock).
Storing and freezing
Cool within 1 to 2 hours. Keeps in the fridge for up to 3 days; thickens on standing. Reheat until steaming hot all the way through and add toppings fresh. Freezes for 2 months without toppings.
Questions
How spicy is it?
Medium. Chipotle adobo sauce brings smoky heat. Use less for a gentle soup or more for a spicy one, and cool it down with extra avocado.
Can I make it dairy free?
Yes. Leave out the queso fresco or use a dairy free alternative. The soup is creamy from the potatoes alone.
Can I use sweet potato?
Yes, for a sweeter soup. Use the same weight and cook it for the same time.
