Method

  1. 1

Heat the grill to high. Pour your ready made green enchilada sauce (see the base recipe) into a wide ovenproof frying pan and bring it to a simmer over a medium heat.

  2. 2

Stir in the shredded chicken (see the pollo deshebrado base recipe) and simmer for 3 minutes, until steaming hot all the way through.

  3. 3

Fold in the totopos (see the tostadas and totopos base recipe) and turn them gently for 30 seconds, just until coated. Do not leave them to soak or they will go soft.

Tips

  • Suizos is the name for chilaquiles finished with cream and melted cheese, said to be named after the Swiss style of dairy. Do not skip the grilling, it is what makes them rich.
  • Fold the totopos in at the last minute. Chilaquiles are meant to keep some bite in the middle of each piece.
  • Gruyere melts well and is the nearest thing to the cheese often used. Oaxaca cheese or mozzarella also work.
  • Make the sauce and chicken first and have everything ready, because the totopos should hit the heat and go straight to the table.

Storing and freezing

Best eaten straight away because the totopos soften. Keep leftover sauce and chicken in the fridge for up to 3 days and reheat until steaming hot all the way through, then toss with fresh totopos.

Questions

Why are they called suizos?

Suizos means Swiss in Spanish. The name points to the cream and melted cheese on top, which echo Swiss dairy. It is a naming habit in Mexico City, not a Swiss recipe.

Can I make them without chicken?

Yes. Leave the chicken out and add a fried egg per person, or use sliced mushrooms fried until browned. The sauce, cream and cheese are what define the dish.

Can I make this dairy free?

The cream and cheese are central, so this version is not dairy free. For a dairy free plate, use the green sauce and chicken with totopos and avocado, and skip the cream and cheese.
