Method

  1. 1

Heat the oil in a frying pan over a medium-high heat. Fry the lamb mince for 6 minutes, breaking it up, until browned and cooked through. Add the onion and cook for 5 minutes.

  2. 2

Stir in the garlic, cumin, oregano and 0.5 tsp salt. Add 100 ml of your ready made green enchilada sauce (see the base recipe) and cook for 3 minutes until nearly dry. Tip into a bowl.

  3. 3

Wipe out the pan. Lay a flour tortilla (see the base recipe) in it over a medium heat. Cover half with a quarter of the cheese, then a quarter of the lamb, and fold over.

  4. 4

Cook for 2 to 3 minutes on each side, pressing down, until golden and the cheese has melted. Repeat with the other 3 tortillas.

    2 min 30 s
  5. 5

Warm the rest of the green enchilada sauce until steaming hot.

  6. 6

Cut each quesadilla into wedges and serve with the warm sauce for dipping and the coriander.

Tips

  • Cook the lamb mixture until almost dry. A wet filling makes the tortilla soggy and splits the seal.
  • Use a medium heat. High heat browns the tortilla before the cheese melts.
  • Grate the cheese yourself. Bagged pre-grated cheese does not melt as smoothly.

Storing and freezing

Best eaten hot. Cool leftovers within 2 hours and keep in the fridge for up to 2 days. Reheat in a dry pan until steaming hot all the way through.

Questions

Can I use beef or pork mince?

Yes. Both work with the same spicing. Cook pork mince for a couple of minutes longer to be sure it is cooked through.

What cheese is best?

Mozzarella melts well and is mild. Mix with a little mature cheddar for more flavour, or use Oaxaca cheese if you can find it.

Can I make these gluten free?

Not with flour tortillas. Use two corn tortillas per quesadilla instead, sandwiched together with the filling, and the dish becomes gluten free.
