Method
- 1
Make your ceviche lime marinade and creamy avocado salsa (see the base recipes) beforehand and chill both.
- 2
Slice each scallop into 3 or 4 thin rounds and lay them in a single layer on a cold plate.
- 3
Pour 100 ml of the ready made ceviche lime marinade (see the base recipe) over the scallops. Leave in the fridge for 6 to 8 minutes.
7 min - 4
Spoon 2 tbsp of your creamy avocado salsa (see the base recipe) on each of four plates and spread it flat.
- 5
Lift the scallops out of the marinade, arrange on the avocado with cucumber, orange segments and red onion, and finish with the chilli and olive oil. Serve at once.
Tips
- Buy large, fresh king scallops without roe from a good fishmonger and ask for them to be previously frozen if eating raw.
- Slice each scallop into 3 or 4 thin rounds. Cold scallops cut cleanly, so keep them in the fridge until you slice.
- Marinate for no more than 6 to 8 minutes. Scallops turn chalky quickly.
- Orange segments add a gentle sweetness that suits the briny flavour.
Storing and freezing
Make and eat within 30 minutes. Do not keep leftovers: throw away the scallops and marinade.
Questions
Can I use cooked scallops?
Yes. Sear the scallops for 1 minute each side, cool, slice and marinate for 5 minutes. It is a safer option for children, older people and pregnancy.
Where do I find scallops suitable for eating raw?
Ask a reputable fishmonger. Scallops sold for eating raw have been handled and frozen properly. Freezing at -20C for 24 hours is the standard advice.
Can I serve it on tostadas?
Yes, spoon the slices over a tostada spread with avocado salsa. Serve immediately because the tostada softens fast.
