Method
- 1
Peel the plantains and slice them on a diagonal into 1.5 cm thick pieces.
- 2
Heat the oil in a large non stick frying pan over a medium heat. Fry the plantain slices in a single layer for 3 to 4 minutes a side, until deep golden and caramelised at the edges. Drain on kitchen paper.
8 min - 3
Warm your ready made pot beans with their broth (see the base recipe) in a pan until steaming hot all the way through. Mash a few against the pan side to thicken.
5 min - 4
Reheat your red rice (see the base recipe) in a covered pan with a splash of water, or in the microwave, until steaming hot all the way through. Only reheat rice once.
- 5
Spoon the rice onto plates and ladle the beans alongside. Add the fried plantain.
- 6
Top the beans with your ready made avocado salsa (see the base recipe), sprinkle with coriander and serve with lime wedges.
Tips
- Use plantains that are almost black. Under ripe ones are starchy and will not caramelise.
- Do not crowd the pan. Fry in batches so the plantain browns rather than steams.
- Cool and refrigerate any leftover rice within an hour, and reheat it only once until steaming hot all the way through.
Storing and freezing
Keep the rice, beans and plantain separately in the fridge. Eat within 2 days, reheating the rice only once until steaming hot all the way through.
Questions
Is fried plantain sweet?
Very ripe plantain is sweet, soft and caramelised when fried, almost like a side dish and dessert in one. It balances the savoury beans and the tang of the avocado salsa.
Is this plate vegan and gluten free?
Yes. Rice, beans, plantain and avocado salsa have no animal products or gluten. Check your tomato sauce or stock if you made the rice from a packet.
Can I add protein?
Yes. Add a fried egg, grilled chicken or chunks of griddled halloumi. The plate is fine as it is for a vegan meal.
