Method

  1. 1

Heat the olive oil in a large pan over a high heat. Add the mushrooms and cook for 6 minutes, stirring now and then, until browned and their water has gone.

    6 min
  2. 2

Add the garlic, jalapeño and oregano and cook for 1 minute. Season with salt. Take off the heat and stir in the coriander.

  3. 3

Warm a tortilla from your base recipe in a dry pan for 20 seconds. Sprinkle an eighth of the cheese over half, add an eighth of the mushrooms and fold over.

  4. 4

Brush the pan with a little oil. Cook each quesadilla over a medium heat for 2 to 3 minutes each side until golden and the cheese has melted. This makes 8 half moon quesadillas, 2 per person.

    6 min
  5. 5

Cut into wedges and serve straight away with your ready made creamy avocado salsa (see the base recipe) for spooning or dipping.

Tips

  • Use a cheese that melts well, such as mozzarella, Oaxaca or mild cheddar. Dry, crumbly cheese will not bind the filling.
  • Dry the mushrooms in the pan until all the water has gone. Wet filling makes soggy quesadillas.
  • Press the quesadilla gently with a spatula for even browning.

Storing and freezing

Best eaten fresh. Keep leftovers in the fridge for up to 2 days and reheat in a hot dry pan until the cheese is hot and melted all the way through.

Questions

Can I make them dairy free?

Yes. Use a dairy free melting cheese alternative. Check the label, as the texture and melt vary between brands.

Why are my corn tortilla quesadillas cracking?

The tortillas were cold or dry. Warm them in a dry pan first and fill only lightly. Overfilling splits them.

What else can go in?

Spinach, roasted peppers, cooked sweetcorn or black beans all work. Keep the filling quite dry.
