Method
- 1
Heat the grill to high. Grill the whole chillies for 10 to 12 minutes, turning, until blistered and black in places. Put them in a bowl, cover with a plate and leave for 10 minutes.
12 min - 2
Peel off the skins, remove the stalks and seeds, and cut the flesh into thin strips (rajas). Wear gloves if you are sensitive to chilli.
- 3
Boil the potatoes in salted water for 8 minutes until just tender. Drain.
8 min - 4
Heat the oil in a large frying pan over a medium heat. Fry the onion for 5 minutes, add the garlic and potatoes and cook for 5 minutes until the potatoes pick up some colour.
10 min - 5
Stir in the chilli strips, oregano and salt and cook for 3 minutes.
3 min - 6
Warm the ready made corn tortillas (see the base recipe). Fill with the potato and rajas and top with your ready made classic guacamole (see the base recipe). Serve with lime.
Tips
- Poblano chillies are mild and rich. If you can only find green peppers, add a chopped jalapeño for warmth.
- Steaming the chillies under a plate makes the skins slip off easily.
- Parboil the potatoes first so they brown quickly without burning.
Storing and freezing
Keep the filling in the fridge for up to 3 days. Reheat until steaming hot all the way through and fill fresh tortillas.
