Method
- 1
Mix the chicken chunks with 120 ml of your ready made pollo asado marinade (see the base recipe). Chill for 2 to 8 hours.
120 min - 2
Thread the chicken onto the skewers, alternating with pineapple, pepper and red onion. Pack them snugly but not tightly.
- 3
Heat the grill or barbecue to high. Cook the skewers for 12 to 15 minutes, turning every 3 minutes, until the chicken is charred at the edges and reaches 75C in the middle.
14 min - 4
Meanwhile, gently reheat your ready made cilantro lime rice (see the base recipe) in a covered pan with a splash of water until steaming hot all the way through.
7 min - 5
Rest the skewers for 3 minutes. Serve on the rice with your ready made creamy avocado salsa (see the base recipe) spooned over and lime wedges.
Tips
- Cut the chicken and pineapple to the same size so everything cooks at the same speed.
- Soaked wooden skewers burn less. Metal skewers are even easier.
- Do not baste with marinade that touched raw chicken once the skewers are cooking.
Storing and freezing
Keeps in the fridge for up to 3 days once cooled within 2 hours. Reheat until steaming hot all the way through. Reheat rice only once.
Questions
Can I cook the skewers in the oven?
Yes. Roast on a rack over a tray at 220C for 18 to 20 minutes, turning once, then grill for 2 minutes to char the edges.
Can I use chicken breast?
Yes, but cut it into slightly larger chunks and check it at 12 minutes, because breast dries faster than thigh.
Can I leave out the pineapple?
Yes, use courgette or mushrooms. Pineapple adds a sweet, juicy contrast that works with the sharp marinade.
