Method

  1. 1

Pour your ready made chile colorado sauce (see the base recipe) and the water into a wide frying pan. Bring to a gentle simmer over a medium heat.

    3 min
  2. 2

Warm your refried beans (see the base recipe) in a small pan and keep them hot. Warm your corn tortillas (see the base recipe) in a dry pan for 20 seconds a side and wrap in a tea towel.

  3. 3

Make 8 small hollows in the sauce with the back of a spoon. Crack an egg into each one.

  4. 4

Cover the pan and cook on a low heat for 4 to 5 minutes until the whites are set and the yolks are still soft. Cook for 2 minutes longer if you want firm yolks.

  5. 5

Serve the eggs and sauce with the beans and tortillas, topped with avocado, coriander and a squeeze of lime.

Tips

  • Use the freshest eggs you can. They hold together better in simmering sauce.
  • Keep the sauce at a gentle bubble. A hard boil breaks up the whites.
  • For a bigger meal, add a handful of diced potato or sweetcorn to the sauce before the eggs.

Storing and freezing

Best eaten straight away. Eggs should be fully cooked and eaten within the hour. Leftover sauce keeps 3 days in the fridge without the eggs.

Questions

Are the eggs safe if the yolk is runny?

Use fresh, British Lion stamped eggs for runny yolks. Pregnant women, the elderly and young children should cook yolks until firm to be safe.

Can I use a different sauce?

Yes, but the chile colorado sauce gives a deeper, earthier flavour than a tomato salsa and is thick enough to hold the eggs in place.

What can I serve instead of tortillas?

Warm crusty bread works. For a gluten free meal, serve the eggs over rice or with gluten free tostadas.
