Method
- 1
Warm the beans in a small pan with a splash of water and a pinch of salt for 5 minutes, mashing about a third of them.
5 min - 2
Crisp the carnitas (see the base recipe) in a dry frying pan for 3 to 4 minutes until steaming hot all the way through. Reheat the arroz rojo (see the base recipe) until steaming hot.
4 min - 3
Mix the tomato, onion, coriander and lime juice to make a quick fresh salsa.
- 4
Warm each flour tortilla (see the base recipe) in a dry pan for 20 seconds a side until soft and pliable.
- 5
Down the centre of each tortilla layer rice, beans, carnitas, cheese, salsa and avocado, leaving a 4 cm border.
- 6
Fold in the two sides, then roll up tightly from the bottom. Sear seam side down in a dry pan for 1 minute to seal, then halve and serve.
Tips
- Warm the tortillas first. Cold tortillas crack when rolled.
- Do not overfill. About a cup of filling per burrito is plenty to roll tightly.
- Wrap in foil to keep warm and hold the shape for packed lunches.
Storing and freezing
Cooled burritos wrapped tightly keep in the fridge for up to 3 days, or freeze for up to 2 months. Reheat until steaming hot all the way through. Reheat rice only once.
